A girl friend had requested to replicate Uncle Tetsu's green tea Madeleines on my Instagram, not knowing it was not something I had made before. Upon request, I went to attempt these Madeleines at her place without the azuki bean filling in the center. I used my mini muffin pan to bake them. Surprisingly, it was a simple recipe and it turned out better than I had expected!

Rothenburg ob der Tauber was probably my favourite town on this trip to Germany. It was a cute, quaint town that was very picturesque. Within the walled town, there were plenty of shops showcasing their products through window displays. I felt like I was a kid in a candy town googled-eye peeking through the window displays admiring their work of art. It felt like Christmas everyday!

Immediately upon arriving at Frankfurt, the financial hub of Germany, we were greeted with beautiful weather and scenery. The walk along the river from our hotel to near the city center was astonishing. There were several bridges along route. Each provided a lovely vantage point. Taro Coconut Milk Roll Cake (Swiss Roll)

Roll cakes are so pretty to look at, especially the ones that are highly decorated. It consists of a sponge cake filled with whipped cream, jam or icing and then rolled up. Japanese roll cakes are very light and fluffy. These cakes are usually filled with whipped cream and fruit. I love that they are not too sweet on the palate.  This recipe is inspired by Cooking with Dog's matcha roll cake (Swiss roll)
